A dish looks best the moment it leaves the pass. After that the foam settles, the sauce spreads, the greens go dark, and two minutes later it is a different picture. Which is why it does not work to book a photographer who sets up lighting first and then asks the chef to cook something. By the time the light is ready the plate is cold.
So I build the set and the lighting first and then work to the kitchen’s rhythm. The plate arrives, gets thirty seconds, and then either goes out to a table or into staff food. That way we cover ten to twelve dishes in a morning. The room I photograph before service, clean and empty, and a full evening separately, because those are the pictures that actually bring reservations in through Google and Instagram.
