The Maddalena archipelago is the shot everyone wants and it is also a protected area: a flight there is authorised, not attempted. It is worth the paperwork, because from above you see what is invisible from the deck, namely how shallow and clear the water runs between one island and the next.
Along the rest of the coast there is more room, with the exception of Olbia where the airport tightens everything. In August the problem is not the permit but the space: off Porto Cervo the boats lie close together and the mistral accelerates between the headlands, so the flying is early and finished before midday.
